If you know me personally this post will make you laugh. I’ve done a lot of really cool things in my life but I can sit here with my hand on my heart and say I’ve never mastered the art of cooking or baking, or anything to do with the kitchen! Unlike most of the women in my family..

Don’t get me wrong I cook healthy meals for my family every night and I often bake treats for them, but they are never overly fancy….

Karina on the other hand is a cook, baker, foodie extraordinaire! She rocks the kitchen like no one else I’ve seen, she makes things up on the spot and they turn out brilliantly, while I sit back and watch, and then enjoy her creations…

Maybe some of her magical cooking skills have rubbed off on me, because today I made the yummiest healthiest creation ever! I’m blown away at how well it turned out.

Usually I follow recipes to the ml, but not today! Today I decided to go free hand, today I tested my culinary skills and it paid off!!

I intended to follow a recipe but much to my dismay I didn’t have half the ingredients I needed so below is my sweet, yet savoury and very yummy zucchini bread…

Ingredients

2 cups of spelt flour

½ cup of raw sugar

1 kids size packet of sultanas

1 handful of cranberries

½ teaspoon of ground cinnamon

2 & ½ teaspoons of baking powder

¼ of a cup of LSA, (ground linseed, almond & sunflower seeds)

2 grated zucchini’s (first wrapped and squeezed in a clean tea towel, to remove as much moisture as possible)

60ml coconut oil

¾ cup of coconut milk

1 teaspoon of vanilla extract

Method

Mix the flour, sugar, sultanas, cranberries, cinnamon, baking powder and LSA together in a big bowl really well.

In a separate bowl mix the zucchini, coconut oil, coconut milk and vanilla extract.

Pour the zucchini mixture bowl into the other large bowl then mix all your ingredients together

Pour into a lined tin and bake for 45 mins at 180.
